Enchiladas



Flour or corn totillas

cooked chicken, beef, or pork

diced onions

grated cheese

green chili enchilada sauce

Coat tortillas with sause, place 1/2 cup meat & onions in center and sprinkle with cheese. Roll tortilla and place in baking pan. Cover with a bit more sauce and cheese. Bake in 350 degree oven until cheese is melted and turns light golden brown.

I'm surprised that you put onions in there. I thought that you didn't like them.

I love the flavor of cooked onions. Not the texture and flavor of fresh onions. Yum.
